Well, merchants will continue accepting both currencies for a long time.
I don’t see merchants in the US or Europe rejecting fiat soon. Maybe in hyper-inflationary countries.
But if more and more people (including merchants) instant-convert all their money into Bitcoin as soon as they receive it, fiat will keep devaluing but still be used.
Some people prefer losing money in stability rather than increasing their net worth while having a bit of risk.
